- 1 x Fryer chicken
- 6 x Garlic cloves peeled, whole
- 12 x Black peppercorns
- 4 x Thyme sprigs
- 1 Tbsp. Toasted cumin seeds
- 1 med Spanish onion cut 1/4" slices
- 2 Tbsp. Salt
- 1 Tbsp. Sugar
- 4 c. White wine
- 1 c. Cider vinegar
- 1 x Lemon thinly sliced
- 1 x Orange thinly sliced
Инструкции
- Cut chicken into 10 pcs and remove skin. Place pcs in a 4-qt saucepan and add in remaining ingredients. Bring to a boil, lower heat, cover and simmer for 1 hour and 20 min. Remove chicken carefully and place in a shallow crock. Pour cooking liquid and solids over chicken and allow to cold. Serve chilled with chicory salad and lemon wedges.
