  • 1 CAN CRUSHED PINEAPPLE (14 OZ.) NATIVE FOREST ORGANIC -FOR 20 OZ. CAN, DRAIN THE JUICE BUT SAVE IT.
  • 1/2 CUP EARTH BALANCE (BUTTER) (MELTED)
  • 1/2 CUP ORGANIC COCONUT OIL (MELTED)
  • 2 TEASPOONS ALMOND OR VANILLA EXTRACT
  • 2 CUPS GLUTEN FREE FLOUR MIXTURE
  • 2 TEASPOONS BAKING POWDER
  • 1 TEASPOON ZANTHAN GUM
  • 2 CANS (14 OZ. EA.) ORGANIC SWEETENED CONDENSED MILK.
  • 2 PKGS. (7 OZ. EA.) 4 CUPS ORGANIC, FLAKED COCONUT
  • 1 PKG. (3.75 OZ.) 1 CUP ORGANIC ALMONDS, GROUND FINE

  1. DRAIN THE PINEAPPLE AND SAVE THE JUICE & SET ASIDE TO ADD TO FLOUR MIXTURE AS NEEDED.
  2. MELT THE EARTH BALANCE (BUTTER) AND ADD TO THE COCONUT OIL TO MAKE 1 CUP, SET ASIDE.
  3. COMBINE THE FLOUR, BAKING POWDER AND ZANTHAN GUM, STIRRING WELL AND ADD THE PINEAPPLE, MIXING WELL, ADD PINEAPPLE JUICE AND 2 TEASPOONS ALMOND OR VANILLA EXTRACT TO MAKE SMOOTH.
  4. IN A SEPARATE BOWL, COMBINE 2 CANS SWEETENED CONDENSED MILK, 2 PKGS. (4 CUPS) FLAKED COCONUT, 1 CUP GROUND ALMONDS, BUTTER, COCONUT OIL, ADDING IN THE FLOUR, PINEAPPLE MIXTURE AND BEAT WITH ELECTRIC MIXER.
  5. SPOON BY HEAPING TABLESPOONFUL, 1" APART, ONTO GREASED COOKING SHEETS.
  6. BAKE IN 350 DEGREE OVEN, 13 TO 15 MINUTES.
  7. COOL ON WIRE RACK AND PUT IN COOKIE JAR.
  8. STORE IN REFRIGERATOR.
