- DRAIN THE PINEAPPLE AND SAVE THE JUICE & SET ASIDE TO ADD TO FLOUR MIXTURE AS NEEDED.
- MELT THE EARTH BALANCE (BUTTER) AND ADD TO THE COCONUT OIL TO MAKE 1 CUP, SET ASIDE.
- COMBINE THE FLOUR, BAKING POWDER AND ZANTHAN GUM, STIRRING WELL AND ADD THE PINEAPPLE, MIXING WELL, ADD PINEAPPLE JUICE AND 2 TEASPOONS ALMOND OR VANILLA EXTRACT TO MAKE SMOOTH.
- IN A SEPARATE BOWL, COMBINE 2 CANS SWEETENED CONDENSED MILK, 2 PKGS. (4 CUPS) FLAKED COCONUT, 1 CUP GROUND ALMONDS, BUTTER, COCONUT OIL, ADDING IN THE FLOUR, PINEAPPLE MIXTURE AND BEAT WITH ELECTRIC MIXER.
- SPOON BY HEAPING TABLESPOONFUL, 1" APART, ONTO GREASED COOKING SHEETS.
- BAKE IN 350 DEGREE OVEN, 13 TO 15 MINUTES.
- COOL ON WIRE RACK AND PUT IN COOKIE JAR.
- STORE IN REFRIGERATOR.
