- 4 Tbsp. unsalted butter
- 6 x shallots, thinly sliced
- 1 Tbsp. tomato paste
- 1/2 c. vodka
- 2 Tbsp. fresh thyme, chopped or possibly 2 tsp. dry thyme
- 2 Tbsp. fresh basil, chopped or possibly 2 tsp. dry basil
- 1Â 1/2 c. whipping cream
- 3/4 c. grated fresh Parmesan cheese
- 1 lb penne pasta
- Â Â salt & black pepper, to taste

- Heat butter in a large skillet over medium heat. Add in shallots and saute/fry till very tender and beginning to color, about 10 min. Add in tomato paste. Stir in well, allowing tomato paste to caramelize somewhat. Add in the vodka, then simmer till the sauce slightly thickens about 10 min. Add in herbs and saute/fry 1 minute more. Add in the whipping cream and 1/2 c. of the Parmesan cheese and stir to combine. Boil the pasta to the desired doneness. Add in the liquid removed pasta to the sauce and toss to coat. Season to taste with salt and pepper. Top the pasta with the remaining Parmesan cheese and serve.
