- 1/2 c. red lentils
- 250 gm wholemeal spaghetti
- 7Â 1/2 gm butter
- 1/2 tsp grnd nutmeg
- 1/2 x onion
- 3 x spinach leaves
- 1/2 Tbsp. lemon juice
- 1/8 c. toasted pine nuts

- Cook the lentils in boiling water till tender. Cook the pasta in a large quantity of boiling water till just tender. While they are cooking heat the butter in a pan. Add in the nutmeg and onion and cook over a gentle heat till the onion is soft. Add in spinach, cover and cook till the spinach is just tender. Drain the lentils, add in the lemon juice; stirring to combine. Drain the pasta. Combine the lentils, pasta and spinach. Place on a serving plate and sprinkle with pine nuts. Serve immediately.
