- 1/4 c. Cool water
- 1 c. Boiling water
- 3/4 c. Sugar
- 1/4 c. Lemon juice
- 1 Tbsp. Lemon rind
- 2 x Egg whites, stiffly beaten

- Soften gelatin in cool water. Stir in next 4 ingridients. Strain and cold.
- Stir occasionally. When begins to set, beat with rotary beater till frothy.
- Beat in stiffly-beated egg whites. Continue beating till mix holds shape. Pile into sherbet glasses. Chill. Serve with soft custard.
- Serves 8.
