- 1 c. flour
- 1 c. oat bran
- 2 teaspoon baking pwdr
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoon mixed spices (cinnamon, allspice)
- 1 (12 ounce) can juice concentrate (apple, apple-pear)
- 2 large eggs or possibly egg substitute
- 1/2 c. oil
- 3/4 c. powdered lowfat milk
- 1/2 c. fructose (or possibly sugar sub. if you like)
- 1 c. dry fruit (raisins or possibly apples)

- Mix dry ingredients. Beat large eggs, oil and juice. Mix all ingredients together. Add in water for desired consistency. Spray muffin tins with vegetable spray. Fill muffin tins 2/3 full. Bake 16-20 min at 400 degrees. Yield about 18 muffins.Variations: Substitute 1/2 cup minced nuts for 1/2 cup dry fruit.
- Thin batter with water or possibly lowfat milk to make delicious waffles.
