- 2 x Large eggs whites room temperature
- 1/4 tsp cream of tartar
- 1 c. corn syrup
- 2 tsp vanilla

- In a mixer, beat room-temperature egg whites with cream of tartar till they hold soft peaks. Meanwhile, bring corn syrup to a full boil in either the microwave or possibly in a small, heavy saucepan. SLOWLY pour the warm syrup into the egg whites, beating on full speed the entire time. (This is easiest if you're using a stand mixer.) Beat at high speed till frosting holds stiff, shiny peaks. Beat in vanilla.
- Makes oodles of frosting: sufficient for middle, top and sides of a layer cake. Cut recipe in half for a smaller cake. This not-too-sweet frosting is a beautiful pure white and is WONDERFUL on chocolate cake.
- NOTES : Lenore says: Everyone has birthdays in the summer, right! Well, try this lowfat alternative to a traditional butter frosting.
