- 4 lrg Large eggs, hard-boiled -- minced
- 1/4 c. shredded sharp cheddar cheese
- 1 Tbsp. minced green onions
- 2 Tbsp. mayonnaise
- 2 Tbsp. salsa
- 1 Tbsp. lowfat sour cream
- 1/8 tsp salt
- 1/8 tsp black pepper
- 6 x taco shells Lettuce leaves
Инструкции
- Combine first three ingredients in a bowl; set aside.
- Combine mayonnaise and next 4 ingredients; fold into egg mix.
- Line taco shells with lettuce. Spoon egg salad proportionately into taco shells.
- Garnish, if you like, with shredded cheese and/or possibly avocado slices, and serve with salsa.
- 6 servings.
