!%3C/p%3E%3Cp%3ENow%20rough%20dense%20corn%20may%20be%20fine%20for%20pigs%20and%20gerbils,%20but%20I%20prefer%20to%20concentrate%20on%20the%20pretty%20sister%E2%80%93%20sweet%20corn.%20She%20wasn't%20always%20so%20sweet,%20what%20woman%20could%20be?%20In%20fact%20(and%20women%20will%20hate%20me%20for%20this)%20man%20made%20corn%20sweet.%20Men%20like%20sweet.%20Sweet%20corn%20began%20to%20earn%20her%20name%20more%20than%20100%20years%20ago%20when,%20through%20cross-breeding,%20man%20began%20eyeing%20corn%20and%20decided%20to%20mold%20her%20into%20a%20more%20carnal%20kernel.%20One%20whose%20sugar%20content%20is%20considerably%20higher%20than%20the%20heirlooms%20from%20whose%20genes%20she%20sprung.%3C/p%3E%3Cp%3EThe%20irony%20of%20course%20is%20this:%20In%20the%20case%20of%20corn%20America%20began%20to%20shun%20the%20heirloom%20varietal%20about%201960%20and%20we%20have%20not%20looked%20back%20at%20her%20ugly%20face%20ever%20since.%20In%20fact,%20when%20it%20comes%20to%20corn%E2%80%93%20American's%20are%20sweet%20on%20the%20genetically%20modified%20version.%20So%20sweet%20that%20many%20of%20the%20ancestors%20to%20the%20modern%20ear%20of%20corn%20we%20crave%20have%20disappeared%20forever.%3C/p%3E%3Cp%3EToday's%20corn%20was%20commercially%20introduced%20to%20my%20parent's%20generation%20and%20is%20now%20known%20as%20the%20Sh2%20hybrids.%20The%20two%20denotes%20the%20simple%20fact%20that%20this%20corn%20has%20twice%20the%20sugar%20as%20was%20standard%20before%20the%20modification.%20But%20the%20thing%20about%20sweet%20girls%20is%20they%20don't%20usually%20stay%20that%20way.%20No%20sooner%20has%20she%20said%20%22yes%22%20than%20this%20gal%20starts%20to%20turn%20tough%20and%20starchy%20on%20you.%3C/p%3E%3Cp%3EIn%20fact%20the%20sugar%20in%20corn%20begins%20its%20starchy%20transformation%20within%20a%20half%20an%20hour%20of%20being%20picked%20(or%20should%20I%20say%20plucked?).%20Especially%20the%20older%20varieties.%20Though%20cool%20temperatures%20can%20slow%20this%20process%20down%20some,%20and%20the%20latest%20'super-sweet'%20hybrids%20can%20maintain%20decent%20sugar%20levels%20for%20up%20to%2010%20days.%20Still%20your%20best%20bet%20is%20to%20hit%20the%20farmers%20market%20early%20in%20the%20day,%20hurry%20home%20and%20get%20that%20corn%20into%20the%20refrigerator%20for%20serving%20before%20the%20sun%20goes%20down.%3C/p%3E%3Cp%3EWhich%20is%20exactly%20what%20I%20have%20done.%20I%20hit%20up%20the%20Hollywood%20Farmers%20Market%20and%20brought%20home%20a%20bushel%20of%20my%20sweet%20desire.%20It's%20the%20subject%20of%20my%20Market%20Matters%20post%20and%20the%20beginning%20of%20week%20devoted%20to%20corn.%20Corn,%20corn%20and%20more%20corn.%20Seven%20days%20of%20the%20sweetest%20little%20lady%20you'd%20ever%20want%20to%20eat.%20Sure%20she's%20my%20ladylove,%20but%20she's%20more%20than%20enough%20woman%20for%20us%20all%20to%20have%20a%20little%20on%20the%20side.%3C/p%3E%3Cp%3EGrilled%20Corn%20with%20Feta%20&%20Lime%20makes%204%3C/p%3E%3Cp%3EAdapted%20from%20Martha%20Stewart%20Living%3C/p%3E%3Cp%3EHeat%20the%20grill%20to%20high.%20Soak%20corn%20in%20cool%20water%20for%2010%20minute,%20turning%20occasionally.%3C/p%3E%3Cp%3EPeel%20back%20the%20husks%20of%20the%20corn%20without%20removing%20them%20completely.%20Remove%20as%20much%20of%20the%20silks%20as%20you%20can.%20Return%20the%20husks%20to%20as%20close%20to%20their%20original%20place%20as%20possible,%20tying%20them%20in%20place%20if%20necesary.%20Transfer%20to%20grill.%20Cover;%20cook,%20turning%20often,%20until%20husks%20are%20charred,%2010%20minutes.%20Remove%20from%20grill.%3C/p%3E%3Cp%3EUsing%20a%20kitchen%20towel,%20pull%20back%20husks.%20Combine%20mayonnaise,%20lime%20juice,%20and%20chili%20powder;%20brush%20onto%20the%20partially%20cooked%20corn.%20Return%20corn%20to%20grill%20(with%20husks%20pulled%20back%20and%20off%20heat).%20Cover;%20cook,%20turning%20often%20and%20brushing%20with%20more%20chili-lime%20sauce%20as%20needed,%20until%20kernels%20are%20charred%20in%20spots,%2010%20to%2015%20minutes.%3C/p%3E%3Cp%3ERemove%20to%20a%20serving%20plate%20and%20dust%20with%20finely%20grated%20feta%20cheese.%20Season%20with%20coarse%20salt%20and%20serve%20with%20lime%20wedges%20on%20the%20side.%3C/p%3E){kind=link}
