.%20If%20it's%20on%20the%20menu%20in%20a%20pub%20or%20restaurant,%20it's%20my%20drink%20of%20choice.%3C/p%3E%3Cp%3EI've%20been%20happy%20to%20observe%20that%20I'm%20not%20alone.%20Artisanal%20cider-making%20is%20growing%20in%20popularity,%20at%20least%20as%20evidenced%20by%20the%20number%20of%20articles%20about%20it%20that%20keeping%20popping%20up%20in%20the%20foodie%20publications.%3C/p%3E%3Cp%3ESo,%20armed%20with%20a%20love%20of%20cider%20but%20almost%20no%20knowledge,%20Mr.%20Ninj%20and%20I%20made%20cider%20last%20year.%3C/p%3E%3Cp%3EAnd%20you%20know%20what?%20It%20was%20awesome.%20Wicked%20awesome,%20in%20fact.%3C/p%3E%3Cp%3EI%20relied%20almost%20exclusively%20on%20a%20how-to%20article%20from%20the%20Mother%20Earth%20News%20and%20the%20advice%20of%20Vermont%20Homebrew%20Supply,%20the%20owners%20of%20which%20very%20patiently%20answered%20all%20my%20newbie%20questions%20as%20I%20took%20copious%20notes.%3C/p%3E%3Cp%3EGiven%20how%20successful%20and%20delicious%20our%20experiment%20was%20last%20year%20with%20five%20gallons%20of%20cider,%20we%20decided%20to%20double%20it%20this%20year,%20and%20I'm%20going%20to%20chronicle%20our%20efforts%20here%20so%20you%20might%20try%20to%20make%20some,%20too.%3C/p%3E%3Cp%3EWelcome%20to%20Ninja%20Cider-Making,%20part%201.%3C/p%3E%3Cp%3EWe%20took%20our%20sanitized%20buckets%20to%20Chapin%20Orchard%20in%20Essex,%20Vermont,%20to%20procure%20some%20freshly%20pressed%20cider.%20We%20are%20fortunate%20in%20that%20Chapin%20does%20a%20special%20cider%20crush%20every%20year%20especially%20for%20those%20who%20like%20to%20make%20their%20own%20hard%20cider%20over%20the%20winter.%3C/p%3E%3Cp%3EApples%20are%20fed%20into%20the%20hopper%20from%20outside%20and%20then%20make%20their%20way%20to%20the%20pressMr.%20Ninj%20fills%20our%20buckets%20with%20cider%20just%20pressed%20in%20the%20press%20directly%20underneath%3C/p%3E%3Cp%3EOnce%20we%20got%20home,%20we%20let%20the%20icy-cold%20juice%20come%20to%20room%20temperature%20by%20leaving%20the%20sealed%20buckets%20in%20the%20kitchen%20overnight.%20In%20the%20morning,%20I%20removed%20about%20a%20gallon%20of%20juice%20from%20each%20bucket,%20warmed%20it%20in%20two%20pots%20(one%20for%20each%20bucket)%20on%20the%20stove%20and%20dissolved%20a%20two-pound%20box%20of%20turbinado%20sugar%20in%20each%20pot.%20You%20can%20use%20a%20variety%20of%20kinds%20of%20sugar,%20or%20even%20honey,%20but%20whatever%20you%20choose%20will%20make%20the%20cider%20a%20bit%20sweeter%20while%20simultaneously%20helping%20the%20fermentation%20process%20along%20and%20increasing%20the%20alcohol%20content.Adding%20the%20sugar%20to%20the%20cider%3C/p%3E%3Cp%3EAfter%20returning%20the%20sugar-cider%20mixture%20to%20the%20buckets,%20I%20then%20added%20the%20yeast.%20This%20is%20the%20key%20ingredient,%20as%20it%20causes%20the%20fermentation%20process%20which%20turns%20sweet%20cider%20into%20hard%20cider.%20I%20added%20a%20champagne%20yeast%20normally%20used%20in%20wine%20making%20(this%20came%20recommended).%20I%20dissolved%20one%205-gram%20packet%20in%20about%202%20ounces%20of%20cold%20water%20and%20added%20it%20to%20the%20first%20bucket,%20then%20repeated%20the%20process%20for%20the%20second%20bucket.Yeast,%20dissolved%20in%20water%20(left)%20and%20yeast,%20undissolved%20(right)%3C/p%3E%3Cp%3EAfter%20a%20quick%20stir,%20I%20re-sealed%20the%20buckets%20and%20added%20the%20airlocks.%20Airlocks%20are%20a%20gadget%20that%20allows%20the%20gas%20from%20fermentation%20to%20escape%20while%20also%20keeping%20out%20things%20like%20fruit%20flies%20(the%20enemy)%20and%20airborne%20debris,%20which%20could%20spoil%20the%20sweet%20cider.%20I%20don't%20know%20about%20you,%20but%20I%20wouldn't%20want%20to%20end%20up%20with%2010%20gallons%20of%20cider%20vinegar%20instead%20of%20hooch!Buckets%20with%20airlocks%20installed%20(supervised%20by%20the%20Ninjette)%3C/p%3E%3Cp%3EThe%20buckets%20must%20be%20kept%20at%20a%20temperature%20of%20about%2070%20degrees%20F%20to%20ensure%20proper%20fermentation.%20The%20kitchen%20is%20an%20ideal%20place%20to%20keep%20them.%20Now%20we%20wait%20for%20fermentation%20to%20start%20...%20and%20then%20finish.%3C/p%3E%3Cp%3ELast%20year,%20fermentation%20took%20about%20three%20weeks,%20so%20be%20patient%20in%20looking%20for%20Part%202!%3C/p%3E%3Cp%3ERead%20the%20whole%20series:%3C/p%3E){kind=link}
