- 1 x (16 ounce.) pkg. wide egg noodles
- 1 x (8 ounce.) container low-fat cottage c, heese
- 1 x (8 ounce.) container fat-free sour cre, am
- 1 x (8 ounce.) container egg substitute, t, hawed
- 1 1/2 c. Low-fat lowfat milk
- 1 x (10 ounce.) pkg. frzn minced spinac, h, thawed & well d
- 1 Tbsp. Sugar
- 1 1/2 tsp Salt
- 1/2 tsp Pepper
- 1/8 tsp Grnd nutmeg crumb topping

- One hour before: In large saucepan, prepare egg noodles as label directs; drain. Remove noodles to saucepan. Preheat oven to 350 degrees. In blender at medium speed, blend cottage cheese, lowfat sour cream alternative, and egg substitute till smooth. Into noodles, stir cottage cheese mix, lowfat milk, spinach, sugar, salt, pepper and nutmeg till blended. Grease shallow 3 1/2 qt casserole. Spoon noodle mix into casserole. Cover and bake for 40 min or possibly till warm. Meanwhile, prepare crumb topping: Tear 2 slices white bread into small pcs. In 10 inch skillet over medium heat, heat 2 Tbsp. margarine. Add in bread crumbs and cook till golden brown, stirring frequently. Remove skillet from heat. Sprinkle crumb topping over casserole. 6 main servings.
