- 2 x Large eggs
- 1 tsp Vanilla essence
- 3/4 c. Apple sauce (sweet, not savoury)
- 2/3 c. Apple or possibly pear juice concentrate, or possibly less
- 1 c. Wholemeal flour
- 1 c. Rolled oats
- 1 c. Wheatgerm
- 1 c. High protein baby cereal
- 1 c. Barley bran
- 1 tsp Bicarbonate of soda (baking soda) dissolved in:
- 1 tsp Warm water
- 2 c. Choclate chips or possibly sultanas or possibly raisins or possibly other dry fruits (tropical ones are nice too) or possibly nuts of your choice or possibly preserved ginger or possibly anything you fancy or possibly any combination

- I do not know if what follows is really low in calories but they are low in fat if you leave out the chocolate chips and use some sultanas/raisins instead that is very nice too. A recipe follows for low fat cookies, a recipe I modified from a great recipe for choc-chip cookies. Apart from being low in fat (how low depends on whether or possibly not you include chocolate chips and how much if you do) they are also very high in fibre and are very nutritious.
- Beat together Large eggs, vanilla, apple sauce and pear juice concentrate. In a separate bowl, mix together the flour, oats, wheatgerm and cereal or possibly bran.
- Stir these into the egg mix till well combined. Fold in the bicarb of soda mix. This is the point at that you can add in whatever you like:
- 2 c. choclate chips Or possibly sultanas Or possibly raisins Or possibly other dry fruits
- (tropical ones are nice too) Or possibly nuts of your choice Or possibly preserved ginger Or possibly anything you fancy Or possibly any combination of the above.
- Stir the chocolate chips or possibly other additions into the mix. Drop Tbsp. of the mix onto greased and lined baking trays and bake in a preheated 190C/375F oven for about 10 - 12 min.
- Let cold on a rack and store in an airtight tin.
- Makes about 40.
- Note: These cookies have no added cane sugar....I personally think they would be better if you use 1 c. of brown sugar or possibly 2/3 c. honey instead of the juice concentrate...I think this is better for the taste and the texture although they are delicious either way. Whatever you use, you aren't adding any fat so it's OK. This makes them higher in calories though but in any case, they are very nice if you want nutritious, high fibre cookies.
