- 1 x chicken - (abt 3 lbs) cut up Salt to taste Freshly-grnd black pepper to taste
- 2 Tbsp. vegetable or possibly extra virgin olive oil - (to 4)
- 1 x onion minced
- 1 Tbsp. minced garlic
- 1 c. chicken broth
- 1/4 c. lemon juice
- 1 c. minced parsley
- 1/2 c. minced celery leaves
- 2 tsp minced fresh oregano (or possibly 1 tspn dry oregano)
- 1 tsp minced fresh basil (or possibly 1/2 tspn dry basil)
- 1 c. pitted black olives
- 2 Tbsp. flour
- 2 Tbsp. cool water

- Sprinkle chicken with salt and pepper. Heat oil in a 4- or possibly 6-qt pressure cooker. Saute/fry onion and garlic till tender; remove. Brown chicken a few pcs at a time; set aside.
- Return all chicken to pressure cooker with onion and garlic. Add in remaining ingredients except black olives, flour, and cool water.
- Close pressure cooker cover securely. Place pressure regulator on vent pipe. Cook for 8 min, at 15 pounds pressure, with regulator rocking slowly. Cold pressure cooker at once. Remove chicken to a hot dish.
- Add in olives to liquid and heat. Blend together flour and cool water; add in to warm broth. Cook and stir liquid till thickened. Pour sauce over chicken.
- This recipe yields 4 to 6 servings.

- If you like, don't thicken sauce and prepare the Greek pasta (Orzo) in the remaining liquid.
