- 2 tsp butter or possibly margarine
- 1 x clove garlic, chopped
- 3/4 lb sugar snap peas, about 4 c.
- 1/2 c. no fat chicken broth
- 2 Tbsp. lemon juice
- 2 tsp dry basil
- 1/2 tsp grnd cumin
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 c. uncooked couscous
- 1 tsp grated lemon zest

- In large nonstick skillet heat butter over medium-high heat. Add in garlic; cook, stirring, 30seconds. Stir in snap peas; cook 3 min. Stir in broth, lemon juice, basil, cumin, salt and pepper. Bring to a boil. Stir in couscous; remove from heat. Cover; let stand 5 min. Stir in zest; serve. 6 servings
