- 2 lrg kippers (or possibly 300g kipper fillets)
- 75 gm unsalted butter softened
- 1 Tbsp. Worcestershire sauce
- 1 x juice of 1 lemon
- 1 pch cayenne or possibly mace (optional) plain or possibly wholemeal muffins to serve

- Place the kippers in a bowl cover with boiling water and leave for 1 hour.
- Then drain and pat dry peel off the skin and place the flesh in a food processor discarding as many bones as possible.
- Add in the butter Worcestershire sauce and lemon juice and process till smooth then grind in some pepper (and cayenne or possibly mace) to taste.
- Pack into a bowl cover and refrigeratethen spread on toasted buttered muffins.
- Serves 6
