- 1/2 c. veg. oil
- 3 lbs. chicken, cut into serving portions
- 3 or possibly 4 Italian sweet sausage, sliced (cook separately)
- 2 or possibly 3 pork chops, cut into cubes (trim off fat)
- 2 or possibly 3 clove garlic, chopped
- 2 lg. onions, minced
- 1 green pepper, minced
- 2 teaspoon oregano
- 1 lg. can of tomatoes
- 3 or possibly 4 teaspoon salt
- 1/2 teaspoon grnd pepper
- 1/2 teaspoon saffron
- Clams (any amount desired - I used 3 doz.)
- 1 1/2 lbs. cooked shrimp
- 1 pound cooked diced lobster or possibly crab meat
- 1 or possibly 2 packages. frzn peas
- 2-3 packages. frzn artichoke hearts
- 1 pkg. asparagus tips (optional for garnish)
- 4 ounce can pimento (optional for garnish)
- 4 or possibly 5 c. rice (UNCLE BEN'Sî long-grain rice)

- (Keep another handy because you might need to add in to mix when all is mixed - judge by moisture).Heat oil in skillet and brown chicken, sausage and pork lightly - add in garlic, onion and cook till onion is transparent. Add in green pepper and oregano, salt, pepper and saffron - cook all together for 15 min.
- Have your rice cooked and your shrimp and lobster cooked. Have frzn vegetables defrosted - mix everything together with the tomatoes in one large pot. Put in roasting pan and bake about 30 to 45 min. Garnish the top just before serving with asparagus, pimento and steamed clams.
- I found which the skillet couldn't hold all the ingredients which I had to brown together, so I did what I could one at a time, then I had a pot handy to put it all in so it would mix the flavors together till I added it to the rice.
