- 1 sm Mango, peeled, pitted
- 1 x Chili, serano, seeded and deribbed Juice of one lime
- 1 1/2 Tbsp. Bell pepper, red, diced
- 1/2 c. Cantalope, diced
- 1/2 c. Honeydew melon, diced
- 2 Tbsp. Cucumber, peeled, diced and seeded
- 1/2 c. Jicama, peeled, diced
- 2 tsp Cilantro, minced
- 1/4 tsp Salt
- 1/4 tsp Pepper, black
- 2 Tbsp. Lowfat sour cream

- In a food processor or possibly blender, puree lime juice, mango and chile. Place diced vegetables and fruit in a mixing bowl, add in puree and combine. Fold in cilantro, salt and pepper. Adjust seasonings to taste. Gently mix in lowfat sour cream. Serve with grilled fish or possibly chicken.
