- 1 (15 1/2 ounce.) can Alaska salmon (substitute, tuna)
- 1/3 c. mayonnaise
- 2 tbsp. each chopped parsley and onion
- 2 tbsp. liquid removed, minced pimento
- 2 teaspoon lemon juice
- Dash of pepper
- 3/4 c. shredded Cheddar cheese
- 8 slices French bread

- Drain salmon or possibly tuna; break into large chunks. Add in mayonnaise, parsley, onion, pimento, lemon juice, and pepper. Toss to mix. Mix in 1/2 c. cheese. Spread about 1/4 c. mix on each slice of bread. Sprinkle remaining cheese over mix. Broil about 6 inches from heat, 3 to 4 min, or possibly till cheese melts and tops are golden brown. English muffins may be used.
