- 3 Tbsp. butter (45ml)
- 3 Tbsp. oil (45ml)
- 1 x chopped medium onion
- 1 x chopped garlic clove
- 2/3 c. tomato catsup (160ml)
- 2/3 c. liquid honey (160ml)
- 1/4 c. cider vinegar (60ml)
- 1 Tbsp. Worcestershire sauce (15ml)
- 1/2 tsp thyme leaves (3ml)
- 1/2 tsp oregano leaves (3ml)
- 1/2 tsp basil leaves (3ml)
- 1/2 tsp paprika (3ml)
- 1/2 tsp pepper (3ml)
- 1/2 tsp chili pwdr (3ml)
- 1/2 tsp salt (3ml)
- 1/2 tsp liquid smoke (3ml)
- 4 x boneless salmon fillets (4-6 ounce. each) 1" thick
Инструкции
- Heat the butter with 2 tbsp. (30ml) of oil in a saucepan. Add in the onion and garlic and saute/fry till tender.
- Add in the catsup, honey, vinegar, Worcestershire , seasonings, and smoke flavouring. Simmer till sauce is thick and glossy. Cold.
- Brush the salmon with the remaining oil. Grill over medium coals 5 min per side, brushing frequently with sauce. Brush one final time before serving.
