- 1/4 c. extra virgin olive oil
- 2 tsp basil, crushed
- 1 c. carrots, thinly sliced
- 1/2 tsp oregano, crushed
- 1 lrg clv garlic
- 1 x (6 ounce.) can French-cut green beans, liquid removed
- 1 x (14 1/2 ounce.) can stewed tomatoes
- 1 x (8 ounce.) pkg. rigatoni pasta, cooked and liquid removed
- 2 c. mushrooms, sliced
- 1/4 c. grated Parmesan cheese
- 2 Tbsp. cornstarch
- 1 Tbsp. parsley, minced

- In a frying pan, saute/fry carrots and garlic till carrots are crisp-tender. Then stir in next 5 ingredients. Cook till thickened.
- Add in green beans and pasta. Season with salt substitute and pepper to taste. Toss with Parmesan cheese and parsley before serving.
- Yield: 4 servings
