- 2 c. flour
- 1 T sugar
- 1 teaspoon salt
- 1 teaspoon baking pwdr
- 2 c. buttermilk, or possibly more if needed
- 1 egg
- 1 teaspoon soda (fold in a small amount water)

- In a large bowl mix flour, sugar, salt, and baking pwdr. Stir in buttermilk, add in egg and beat well. Add in the soda mixed with water to the batter. Beat again. Bake on a hot greased griddle. To test griddle sprinkle with a couple drops of water. If water dances the heat is just right.I like to use bacon grease to grease the griddle when I have it. Some buttermilk is thicker than others so which is why you will need more. Remember thick batter makes thick pancakes. I like ours thinner.
