- 1 1/2 c. Wesson oil
- 2 c. Sugar
- 2 whl Large eggs
- 3 c. Fresh apples, minced
- 1 c. Pecans, minced (optional)
- 1/2 can Flaked coconut (optional)
- 1 tsp Soda
- 1 tsp Cinnamon
- 1 tsp Salt
- 3 c. Sifted flour
- 2 tsp Vanilla

- Mix oil and sugar; add in Large eggs and beat. Add in apples and mix well. Sift flour with soda, cinnamon and salt. Add in to the apple mix. Then add in vanilla, pecans and coconut. Pour batter into a loaf pan; bake at 300 degrees for 1 hour and 20 min. This is a nice Christmas cake - takes the place of fruit cake - not as rich.
- Variations; Add in 1 c. minced dates. A tube pan may be used.
