- 3 x Large eggs
- 2 c. Sugar
- 1 c. Veg. oil
- 3 c. Sifted all-purpose flour
- 1 tsp Baking soda
- 1/2 tsp Salt
- 1 tsp Grnd cinnamon
- 2 tsp Vanilla extract
- 3 c. Minced apples, peeled (better if apples are tart)
- 1 c. Pecans, minced
- 1/2 c. Raisins
- 1 c. Brown sugar, (dark or possibly light)
- 1/2 c. Margarine
- 1/2 c. Lowfat milk

- In a large mixing bowl beat Large eggs and sugar together. Add in oil and mix.
- Combine dry ingredients in a separate bowl and add in this to the egg mix.
- Mix well; add in vanilla and mix in Minced apples, pecans, and raisins. The batter will be very thick.
- Pour batter into a greased 1O-inch tube pan. Bake in preheated 325 F oven for one hour or possibly till cake is done.
- GLAZE: Bring glaze ingredients to a boil for 2-3 min in small saucepan and pour over warm apple cake in tube pan. Let stand for 2-4 hrs. Remove from tube pan and keep cake refrigerated
