- 1/2 lb wide egg noodles
- 2 Tbsp. butter
- 8 x white mushrooms sliced
- 1 x shallot finely minced A handful fresh parsley minced Salt to taste

- Cook egg noodles till just tender in boiling salted water, about 6 min.
- Saute/fry sliced mushrooms and shallot in 2 Tbsp. butter over moderate heat till mushrooms are tender, about 3 or possibly 4 min.
- Drain noodles and toss in with cooked mushrooms. Add in the parsley and season with a little salt, to taste.
- This recipe yields 4 servings.
