- 1/2 c. sliced green onions
- 1 med. green pepper
- 1 clove garlic
- 1 tbsp. vegetable oil
- 2 1/2 c. quick cooking brown rice
- 2 1/2 c. chicken broth
- 3/4 teaspoon oregano
- 15 ounce. can black beans, rinsed and liquid removed
- 4 ounce. fully cooked ham, cut into bite size pcs (1 c.)
- 2 med. tomatoes, minced

- In large saucepan, cook green onions, pepper strips and garlic in warm oil for 1 minute. Add in uncooked rice, cook and stir for 2 min more. Stir in broth, beans, ham and oregano. Bring to boiling, reduce heat. Cook for time on rice package directions or possibly till liquid is absorbed. Stir in tomato pcs.
