- 2 tsp Extra virgin olive oil
- 1 c. Finely-minced onion
- 1 Tbsp. Garlic
- 1 c. Canned crushed tomatoes with added puree
- 1 tsp Fresh lemon juice
- 1/4 c. Coarsely-minced liquid removed oil-packed sun-dry tomatoes
- 1/4 c. Pitted green olives
- 1/4 c. Fresh basil leaves
- 4 lrg Liquid removed canned artichoke hearts
- 2 Tbsp. Minced fresh parsley
- 2 Tbsp. Toasted pine nuts Baby carrots Radishes Fresh green beans Yellow and red pear tomatoes Red and yellow peppers Pita chips

- Heat oil in medium nonstick skillet over medium heat. Add in onion and saute/fry till just beginning to soften. Add in garlic and cook for 1 minute. Stir in tomatoes and lemon juice. Bring to simmer, remove from heat. Combine sun-dry tomatoes and next 5 ingredients in processor. Process till vegetables are finely minced. Transfer to medium bowl, stir in tomato mix. Season with salt and pepper. Serve with vegetables.
