- 2 tsp butter
- 1/2 c. sliced yellow onion
- 4 x strips cooked bacon crumbled
- 8 x Large eggs
- 12 ounce lowfat milk
- 1 tsp kosher salt
- 1 tsp freshly-cracked black pepper
- 6 ounce cheddar shredded
- 6 x Savory Crepes (see recipe) Butter for coating pan

- Preheat the oven to 350 degrees.
- In a small saute/fry pan, heat the butter and sweat the onions till translucent/soft. In a small bowl, mix the onions and crumbled bacon together. In a separate bowl, whisk together the Large eggs and lowfat milk, and season with salt and pepper.
- In a large, non-stick, 6-c. muffin tin, place one crepe into each c.. Make sure which the edges of the crepes are slightly pleated and overlap the edge of the tin slightly. Spoon the bacon and onion mix into each c.. Distribute the cheese proportionately into the c.. Pour the egg mix into each c. so which all of the quiches are the same size. Place into a preheated oven for 15 min or possibly till the egg mix is completely set.
