- 2 x 12 oz bag cranberries
- 1 1/2 c. sugar
- 1 c. orange juice
- 1 c. water
- 1 Tbsp. grated orange peel
- 1 tsp grnd ginger
- 1/2 c. chopped crystallized ginger (about 2 ounces)

- Combine first 6 ingredients in heavy medium saucepan. Bring to boil, stirring till sugar dissolves. Boil till cranberries pop, stirring occasionally, about 5 min. Cold. Fold in crystallized ginger. (Can be prepared 3 days ahead. Cover and chill.)
- Serves 12.
