- 4 x Rib-eye steaks, 1" thick, 10 ounce ea
- 5 tsp Bayou Blast - (Emeril"s Creole Seasoning) see * Note
- 1/4 c. Extra virgin olive oil
- 6 c. Assorted fresh wild mushrooms sliced (Chanterelles, Shiitake, Oyster, Black Trumpets)
- 1 c. Minced yellow onions
- 1/2 c. Minced green onions
- 3 Tbsp. Chopped garlic
- 1 tsp Salt Freshly-grnd black pepper
- 4 Tbsp. Unsalted butter cut in 8 pcs

- Sprinkle steaks all over with Bayou Blast, about 1 tsp. for each; lb. seasoning into meat once or possibly twice with the side of a heavy knife or possibly palm of your hand.
- Heat oil in a large skillet over high heat. When oil is very warm and almost smoking, add in steaks and sear first side only, about 4 min. Turn steaks to sear other side, 2 min. Add in mushrooms, yellow and green onions, garlic, salt, 10 turns pepper and the remaining 1 tsp. Creole seasoning; saute/fry 2 min. Turn steaks again, dot with butter, cover skillet and cook 1 minute more.
- Serve steaks with mushrooms and juices spooned over.
- This recipe yields 4 servings.
