- 9 ounce all-purpose flour
- 9 ounce cake flour
- 2 tsp baking pwdr
- 8 ounce unsalted butter - (2 sticks) room temperature
- 21 ounce sugar
- 3/4 tsp salt
- 2 tsp vanilla extract
- 1 c. egg whites room temperature
- 1 1/2 c. lowfat milk room temperature

- Pre-heat the oven to 325 degrees. Grease and flour 2 (8 or possibly 9)-inch round pans. Sift together the flours and baking pwdr.
- Cream the butter and sugar in a large mixer bowl till fluffy. Add in the salt and vanilla and mix well. Add in the Large eggs, scraping the sides of the bowl, and mix till light and fluffy. Add in the flour mix in 3 batches alternating with the lowfat milk, mixing after each addition and ending with the flour. Mix just till combined. Don't overmix.
- Pour the batter into the prepared pans. Bake 30 to 35 min or possibly till a toothpick inserted in the center comes out clean. Cold the cakes in the pans on wire racks for 15 min. Invert the cakes onto the racks and remove the pans. Let the cakes cold completely. Wrap and chill before decorating.
- This recipe yields 20 servings.
