- 1 c. self raising flour
- 1 c. sugar
- 1/4 c. cocoa
- 1/2 c. lowfat milk
- 2 x Large eggs
- 84 gm (3oz) butter
- 1 tsp vanilla or possibly strawberry essence

- Put all the ingredients in mixing bowl and beat at highest speed for 6 min. Bake in 8 inch round greased or possibly lined pan at 175C (350F) for 40 min or possibly till tester is clean when removed from the centre of the cake. I usually cut this cake in two, spread with strawberry jam, sliced fresh strawberries and whipped cream.
