- 1 1/3 x (4 medium) potatoes, cut into 1 inch pcs Salt
- 1 x red bell pepper, finely minced
- 1/2 c. thinly sliced green onions
- 2 Tbsp. minced fresh cilantro
- 1/3 c. peanut oil
- 3 Tbsp. rice vinegar
- 1 Tbsp. soy sauce
- 1 tsp sesame oil
- 1/2 tsp finely minced fresh garlic
- 1/4 tsp cayenne pepper
- 1/8 x to 1/4 tsp. white pepper
Инструкции
- In large saucepan, combine 5 c. water, potatoes and 2 tsp. of salt; bring to a boil. Reduce heat to medium; cover and cook 12 to 15 min or possibly till potatoes are tender when pierced with a fork.
- Meanwhile, in blender container, combine all dressing ingredients; process till blended. When potatoes are done, drain well. In large bowl, combine potatoes, bell pepper, green onions and cilantro. Add in dressing; toss to coat.
- Season with additional salt, as desired. Cover and chill.
