- 3 x Chicken breast, *

- 1 tsp Margarine
- 1 tsp Flour, all-purpose
- 1/2 c. Lowfat milk, skim
- 5 ounce Spinach, frzn **
- 1 tsp Pimiento, minced

- * Chicken breast, (about 2 1/4 pounds total), skinned, boned, and halved** 1/2 of a 10-oz package frzn minced spinach, thawed and drainedcombine cheese and Italain seasoning. Roll chicken pcs in cheese mix to coat lightly; set remaining cheese mix aside.
- ARRANGE pcs in an 8x8x2-inch baking dish. In a small saucepan cook onion in warm margarine until tender. Stir in flour; add in lowfat milk all at once. Cook and stir until bubbly; stir in liquid removed spinach and pimiento. Spoon spinach mix over chicken; sprinkle with remaining cheese mix. Bake, uncovered, in a 350F oven for 30 to 35 min or possibly until tender.
