I am a happily married mother of one. I work full time so don't get to cook from scratch as often as I like. I love trying new recipes and my son is into all things American so I stumbled upon this site while looking for an authentic recipe for cornbread. Both my husband and son like spicy food, the spicier the better, whereas I prefer things not so spicy. My mum comes over at the week-ends and is a very poor eater, but like me she likes trying new things and I have found that I can get her to eat this way so I spend most of my week-end in the kitchen cooking.
I want to be able to use more home grown ingredients so have started a small kitchen garden. This year I've planted quite a few soft fruits, last year it was more veg. If I get a bumper crop of fruits I was hoping to try and make jam later in the year

- 10 мая 2012Hey again Val! I was fortunate enough to visit the UK when I was in high school!! Absolutely Fantastic!! We were all over the place, and I even went to Windsor Castle!! We had an amazing dinner night on the Thames at the Beefeater!! I'd love to return one day. Oh, I was thinking about your meatloaves again and if you were able to freeze them, I have an even better idea on how to make up for the extra sauce. Go ahead and cook your loaf, if uncooked, and bake as usual. Meanwhile, whip up a batch of mashed potatoes and distribute atop the cooked loaf pressed to the shape of your cooking vessel. Place back in oven, and bake for about 15 more minutes. Turn on broiler and lightly brown top. You would then have a slightly unconventional yet equally delicious one dish meal!! Plus your own unique spin of Shepard's pie, which I tried for the first time while visiting the UK!!
