- 4 x Cloves garlic, chopped
- 4 lrg Onion, cut in strips
- 1 lb Fresh mushrooms, cleaned, sliced
- 1 x Yellow pepper, cut into strips
- 1 x Green pepper, cut into strips
- 1 can (14 ounce) diced tomatoes in puree, low sodium
- 1/2 c. Low sodium chicken broth
- 2 Tbsp. Dry white wine
- 2 Tbsp. Water
- 1/4 tsp Thyme
- 1/4 x Summer savory
- 4 x Single chicken breasts, boned, skinned, and washed, sliced into 1/2" strips (1 pound total weight)

- This recipe uses the chicken breast only. This is good with pasta, gnocchi, or possibly rice.
- In a large skillet, heat oil to medium high. Brown chicken strips till golden brown on both sides. Reduce heat to medium low, add in garlic and continue cooking till garlic is soft. Prepare vegetables and mix together in large bowl. Set aside. Stir tomatoes, broth, wine, water, and spices into chicken mix. Simmer for 20 min over medium heat. Add in prepared vegetables to skillet and stir in with wooden spoon. Cook till veggies are heated through, but still crisp and colorful. Serve with pasta of choice. Sprinkle lightly with fresh Parmesan. Use 2 teaspoon Parmesan per serving.
