- 1 lb Skinless, boneless chicken breasts
- 3 x Cloves garlic, chopped
- 4 tsp Oil
- 1 c. Thinly sliced red pepper
- 1 c. Diced zucchini
- 8 ounce Pineapple chunks, in juice
- 3 Tbsp. Balsamic(or possibly red wine) vinegar
- 1 tsp Black pepper
- 2 Tbsp. Sugar
- 3 Tbsp. Flour

- Drain pineapples and save the juice in a separate bowl. Heat oil in large cooking pan. Saute/fry garlic in oil (1-2 min). Add in chicken strips to the oil and brown chicken on all sides, turning frequently (4-6 min). Add in diced zucchini and sliced red pepper to the pan and continue cooking till the vegetables become tender (3 min). Combine pineapple juice, vinegar, flour, sugar and pepper in a jar and shake till blended. Pour over chicken vegetable combo in the pan and continue cooking. Cook over low heat, stirring frequently till sauce thickens (5-7 min). Stir in pineapples.
- Heat for only one more minute and serve.
