Рецепт Cauliflower Cheese with Crunchy Topping
Deliciously different way of serving an old favourite. Once you've tried this, I doubt you'll go back to the 'old' way!
Ингредиенты
- Cauliflower - about 3 cups or 1 medium head cut into florets.
- 2 cups skim milk - I use skim milk to reduce the fat content but this is a personal choice. It doesn't alter the flavour. Whole milk is fine too.
- 2 Tablespoons flour
- 1 Tablespoon butter
- 1/2 teaspoon salt
- 1/2 teaspoon mustard powder
- Wostershire sauce (opt)
- 1/3 teaspoon white pepper (opt)
- Fresh breadcrumbs
- Cheddar cheese - grated.
Инструкции
- Cook cauliflower until al dente (just cooked) in salted water. Drain and tip into an oven proof dish.
- Melt butter in a pot, taking care not to burn it.
- Add flour and mix into butter. Cook gently for a minute.
- Add 2 cups of warm milk and whisk until mixture is well combined and starts to thicken. Remove from heat.
- Add mustard powder, salt, pepper and Wostershire sauce and mix.
- Add about 1/2 cup of grated cheddar cheese and allow to melt in white sauce.
- Pour over cauliflower.
- Mix equal parts of fresh breadcrumbs and grated cheese together and spread over top of white sauce.
- Pop into oven and bake for about 20 minutes at 190/360 until top is golden and crunchy.
- Serve as a side dish with your roast.
- HANDY HINT
- Freeze rolls that are leftover from the braai and grate them (from frozen) whenever fresh breadcrumbs are needed.
