Deliciously different way of serving an old favourite. Once you've tried this, I doubt you'll go back to the 'old' way!

- Cook cauliflower until al dente (just cooked) in salted water. Drain and tip into an oven proof dish.
- Melt butter in a pot, taking care not to burn it.
- Add flour and mix into butter. Cook gently for a minute.
- Add 2 cups of warm milk and whisk until mixture is well combined and starts to thicken. Remove from heat.
- Add mustard powder, salt, pepper and Wostershire sauce and mix.
- Add about 1/2 cup of grated cheddar cheese and allow to melt in white sauce.
- Pour over cauliflower.
- Mix equal parts of fresh breadcrumbs and grated cheese together and spread over top of white sauce.
- Pop into oven and bake for about 20 minutes at 190/360 until top is golden and crunchy.
- Serve as a side dish with your roast.
- HANDY HINT
- Freeze rolls that are leftover from the braai and grate them (from frozen) whenever fresh breadcrumbs are needed.
