- 4 Tbsp. Butter
- 2 lb Sweet potatoes, peeled and coarsely minced
- 2 c. Water
- 1 c. Sugar
- 1 c. Packed dark brown sugar
- 2/3 x Unpeeled orange, sliced and seeded
- 2/3 x Unpeeled lemon, sliced and seeded
- 2 stk cinnamon
- 1 Tbsp. Vanilla
- 1/2 tsp Grnd mace

- Put everything in a pot. Stir. Cover and cook until it comes to a high boil, about ten min. Stir, reduce heat, simmer 20 min. Uncover, stir, and cook till potatoes are tender, about 20 min, stirring occasionally.
