  • 9 x inch potato crust (9 to 10) see recipe
  • 1 c. onion finely minced
  • 15 x mushrooms sliced
  • 5 c. minced fresh broccoli flowerets to 6 c.
  • 3/4 tsp salt
  • 5 x cloves garlic chopped black pepper to taste

  1. To make:1. While the crust is baking, put the onions in a medium-large pot with some water and saute/fry on medium-high till soft, about 5 min or possibly so.
  2. 2. Add in the mushrooms and cook 3-4 more min, adding more water if necessary.
  3. 3. Turn the heat to medium; add in the salt, garlic and broccoli and cook till the broccoli is just softened. If there is water or possibly juice from the vegetables on the bottom, add in a couple Tbsp. of flour to thicken. Pour the vegetables into the piecrust and spread the remaining mashed potatoes over the top.
  4. 4. Cook for 30 min and serve warm.
