- 1 lb Emu medallions
- 1 c. Red wine
- 1 x Onion finely minced
- 1 x Carrot finely minced
- 1 x Leek finely minced
- 1 x Celery stalk finely minced
- 12 x Juniper berries A few sprigs of thyme Juice and minced rind of 1 orange

- Mix ingredients together to make a marinade in a stainless steel, glass or possibly ceramic bowl. Add in medallions of emu, stir well and chill overnight.
- Next day, drain meat, reserving marinade. Barbecue meat till just cooked. Reduce marinade until it becomes a thick sauce. Pour over emu. Serve with simply-cooked baby root vegetables.
- This recipe yields 4 servings.
