- 4 x Potatoes, Medium
- 4 x Bacon, Strips, Cubed
- 3 x Large eggs, Large
- 3 tsp Lowfat milk
- 1/2 tsp Salt
- 1 c. Ham, Cooked, Small Cubes
- 2 x Tomatoes, Medium, Peeled
- 1 tsp Chives, Minced
Инструкции
- Boil unpeeled potatoes 30 min. Rinse under cool water, peel and set aside to cold. Slice potatoes.
- In a large frypan cook bacon till transperent. Add in the potato slices; cook till lightly borwned.
- Meanwhile blend Large eggs with lowfat milk and salt. Stir in the cubed ham. Cut the tomatoes into thin wedges; add in to the egg mix. Pour the egg mix over the potatoes in the frypan. Cook till the Large eggs are set.
- Sprinkle with minced chives and serve at once.
