- 1 1/2 c. uncooked basmati rice">rice or possibly other long grain rice">rice
- 2 Tbsp. veg. oil
- 1 sm onion, thinly sliced
- 1 Tbsp. chopped ginger
- 2 tsp chopped garlic
- 2 x jalapeno or possibly serrano chiles, chopped
- 1/2 tsp garam masala
- 1/2 tsp salt
- 1 pch white pepper
- 3 c. chicken broth, or possibly vegetable broth, or possibly water
- 1/4 c. dry apricots, diced
- 1/4 c. toasted walnuts, coarsely minced
- 1/4 c. toasted cashew halves
- 1/4 c. pitted prunes, minced
- 2 Tbsp. green onion, minced
- 2 Tbsp. toasted coconut
- 1/4 c. plum sauce

- Soak the rice in water to cover for 30 min; drain.
- Heat a 3 qt pan over medium high heat till warm Add in the oil and the onion.
- Cook, stirring till the onion is lightly browned, about 1 minute. Add in the ginger, garlic, chiles, garam masala, salt, and pepper and cook for 10 seconds. Add in the rice and cook, stirring, till the mix is well coated with the oil, about 1 minute.
- Add in the broth and bring to a boil. Cook, uncovered, over medium high heat till the liquid drops to the level of the rice. Reduce the heat, cover and simmer on low till the rice is tender, about 15 min.
- Remove the rice to a serving platter. Sprinkle the apricots, nuts, prunes, green onion and coconut over the rice. Serve with the plum sauce on the side.
- Note: Can substitute raisins for prunes.
