- 1/2 x yellow onion, diced
- 1/2 Tbsp. vegetable oil
- 3 med ripe bananas, mashed
- 1/3 c. apricot jam
- 3/4 c. orange juice
- 1 Tbsp. firmly packed brown sugar
- 1/2 Tbsp. white vinegar
- 1 Tbsp. lime juice (about 1/2 large lime) Salt and pepper, to taste

- In saute/fry pan, saute/fry onion in oil over medium heat till transparent, about 5 min. Add in bananas and continue cooking for another 5 min. Add in jam, orange juice and sugar. Bring to a boil; continue cooking till thickened, about 30 min. Cold.
- Add in vinegar, lime juice, salt and pepper. Rewarm over low heat, stirring.
- Makes about 2 1/2 c..
