- 1 tsp Baking Pwdr
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 1/2 tsp Cinnamon
- 1/8 tsp Cream Of Tartar
- 1/2 c. Sugar substitute (ie, Sugar Twin)
- 1 x Egg Beaters 99% egg substitute or possibly Second Nature
- 1 1/2 c. Mashed Bananas
- 1/3 c. Margarine (ie, Becel Light)
- 3/4 c. Cranberries fresh or possibly frzn

- Preheat oven to 375. Combine first 7 ingredients in large bowl. Beat egg, banana and melted margarine together well. Add in to dry ingredients, stirring just to moisten. Mix in cranberries. Spoon into 12 medium muffin c., lightly greased or possibly lined with paper baking c.. Bake for 20 25 min, or possibly till top springs back when lightly touched.
