I grew up in Orleans Parish (county) on the West Bank of the Mississippi River. I now live in Metairie on the east bank, a suburb of New Orleans. If you've ever been here you know that you can get anywhere in the city from any of the suburbs in less than twenty minutes. I love this city and pray for it's resurgence every day. I can't imagine living anywhere else. The food and fun are unmatched and the culture is as rich as it's food. It's my opinion that New Orleans taught the rest of the country how to eat. With Paul Prudomme we started the culture of the celebrity chef. Yes, that's right Paul Prudomme, not Emeril (He's not even from here) If anything we know how to enjoy life and family. Fondly know as our mom 'nem. (Translation our mom and them). Ask us what we did last week and we'll tell you "We went and ate by my mom 'nem" I know people think we're crazy for living in a bowl that's below sea level, but I think any one's crazy not to. Something's going to kill us in the end, I just choose to go out with great food, great drink and great family.

I was always influenced by my mom. She grew up in Ohio, but her mom, (my granny) was from Lake Charles, Louisiana and knew how to cook. In New Orleans there are certain things you have to know: how to make a roux, how to make a béchamel (white sauce) and what is the holy trinity (onion, celery and green bell pepper). I grew up eating and loving seafood. Dad took us out on the boat regularly to go fishing and crabbing. You can't help but grow up cooking. In New Orleans if you don't cook, you're in serious danger of losing your claim to being a native. It's a right of passage. Even if you don't do everything well you know how do something well. Whether it's gumbo, stewed chicken with brown gravy, a great season combination for a seafood boil or kick ass deviled eggs, you learn to do something good.
