- 3 large eggs, well beaten
- 2 1/2 c. sugar
- 1 c. vegetable oil
- 2 c. grated zucchini, unpeeled
- 2 c. reg. flour, sifted
- 1 c. minced dates
- 1 c. raisins
- 1 1/2 teaspoon salt
- 1 teaspoon baking pwdr
- 1 level teaspoon soda
- 2 T cinnamon
- 2 T nutmeg
- 1 T vanilla
- 1 c. minced nuts (walnut or possibly pecan)

- In large mixer bowl: Add in sugar and oil to beaten large eggs. Beat together till light and yellow. Fold in zucchini, dates, and raisins. Beat well, then add in soda and mix well.Slowly add in flour that has had all dry ingredients added to it and beat well. Add in nutmeats and vanilla and beat again. Will make two loaves bread 9 x 5 or possibly 1 large and 5 small.
- Preheat oven to 350 degrees at least 10 min. Large loaf takes one hour or possibly till toothpick comes out clean and small about 40 min.
