- 1 pkg. Italian turkey sausage
- 2 tbsp. extra virgin olive oil
- 2 c. thin onion wedges
- 2 med. peppers, cut in wedges
- 1 garlic clove, crushed
- 1 (8 ounce.) pkg. mushrooms, quartered
- 1 (14.5 ounce.) can whole peeled tomatoes with juice

- Halve sausage links crosswise, cover and simmer in 1/4 inch water in a large skillet 8 to 10 min. Uncover and cook till liquid is absorbed and sausages are browned. Transfer to a side dish. Heat oil in skillet, add in onions and peppers, saute/fry 2 min. Cover and cook over low heat, stirring occasionally for 10 min. Add in garlic and mushrooms, saute/fry 1 minute. Stir in tomatoes with juice and cooked sausage. Simmer uncovered, stirring to break up tomatoes till liquid cooks down; 10 min.
