,%20and%20then%20there%20were%20peaches...%20What%20can%20I%20say%20-%20it's%20peach%20season%20in%20North%20Carolina%20and%20I%20can't%20resist%20them%20when%20I%20head%20to%20the%20farmers'%20market.%20%20Apricot%20glaze%20and%20peach%20-%20YES!%20%20Needless%20to%20say%20I%20had%20to%20revamp%20the%20recipe%20to%20suit%20my%20pantry%20and%20the%20season.%3C/p%3E%3Cp%3EHere's%20the%20burger%20recipe:%3C/p%3E%3Cp%3EI%20have%20some%20very%20fragrant%20lemon-thyme%20growing%20at%20my%20house,%20which%20I%20knew%20would%20be%20perfect%20with%20the%20apricot/ginger%20sauce%20and%20peaches.%20%20When%20using%20fresh%20herbs%20you%20don't%20want%20to%20use%20the%20tough%20stems,%20so%20slide%20the%20leaves%20off%20against%20the%20direction%20in%20which%20they%20are%20growing.%20%20Fresh%20herbs%20can%20be%20hard%20to%20chop%20when%20they%20are%20wet,%20so%20I%20usually%20chop%20them%20dry,%20and%20then%20wash%20them.%20%20%20A%20tea%20holder%20is%20a%20great%20tool%20for%20this.%20%20If%20I%20had%20one%20of%20those%20individual%20ball%20holders%20I%20would%20use%20that,%20but%20since%20I%20didn't,%20I%20used%20this%20individual%20mesh%20tea%20holder,%20and%20it%20worked%20just%20fine.%3C/p%3E%3Cp%3EIn%20a%20medium%20mixing%20bowl,%20mix%20together%20the%20meat,%20chopped%20thyme,%20mustard,%20Worcestershire%20sauce,%20and%20salt.%20You%20can%20see%20how%20nice%20and%20pink%20the%20meat%20is%20-%20if%20it's%20brown%20at%20all,%20it%20means%20that%20it's%20been%20exposed%20to%20the%20air%20and%20wasn't%20stored%20properly.%20I%20like%20to%20mix%20it%20all%20up%20with%20my%20hands,%20using%20a%20light%20touch%20to%20combine%20everything%20together.%3C/p%3E%3Cp%3EDivide%20the%20mixture%20into%205%20patties,%20each%20about%201/2-inch%20thick.%20%20They%20will%20look%20quite%20large,%20and%20maybe%20a%20little%20thinner%20than%20you'd%20like%20them,%20but%20when%20they%20cook%20they%20tend%20to%20draw%20up,%20and%20will%20be%20thicker%20and%20smaller%20after%20they've%20cooked.%3C/p%3E%3Cp%3E(I%20actually%20had%20more%20than%201-1/3%20lbs,%20which%20is%20why%20there%20is%20a%20small%20blob%20in%20the%20middle-%20for%20our%20dog,%20Molly!)%3C/p%3E%3Cp%3ESpray%20a%20cast%20iron%20skillet%20with%20some%20cooking%20spray%20and%20turn%20the%20heat%20on%20high.%20%20When%20the%20pan%20is%20very%20not%20-%20just%20before%20smoking,%20add%20the%20burgers.%20%20Let%20the%20burgers%20cook%20for%20about%203%20minutes,%20turning%20down%20the%20heat%20just%20slightly%20if%20they%20appear%20to%20be%20overbrowning.%20%20Flip%20the%20burgers%20over%20and%20let%20them%20cook%20another%203%20minutes.%20Place%20half%20of%20the%20glaze%20in%20a%20small%20bowl.%20%20Brush%20the%20burgers%20with%20the%20glaze.%20%20Partially%20cover%20the%20pan,%20reduce%20the%20heat%20to%20low%20to%20medium%20(depending%20on%20your%20stove%20-%20you%20don't%20need%20the%20burgers%20to%20brown%20anymore,%20but%20you%20do%20need%20to%20get%20the%20centers%20cooked).%3C/p%3E%3Cp%3ELet%20the%20burgers%20cook%20another%202%20minutes,%20and%20then%20%20flip%20them%20over%20again,brush%20with%20the%20glaze%20and%20let%20them%20cook%20for%201%20more%20minute.%20%20The%20interior%20temperature%20should%20be%20about%20165%20degrees.%20%20They%20will%20continue%20to%20cook%20after%20you%20remove%20them%20from%20the%20pan%20and%20while%20you%20brown%20up%20the%20peaches.%3C/p%3E%3Cp%3EWhile%20the%20burgers%20are%20cooking,%20slice%20the%20peaches%20in%20half%20to%20remove%20the%20stone.%20%20Slice%20each%20peach%20half%20into%205ths,%20and%20squeeze%20the%20juice%20over%20the%20slices,%20and%20then%20dab%20on%20some%20of%20the%20apricot%20glaze.%20%20These%20are%20freestones,%20so%20the%20pit%20comes%20right%20out%20of%20them.%20%20If%20you%20don't%20get%20freestones,%20you%20will%20have%20to%20cut%20the%20peach%20off%20of%20the%20pit%20-%20it%20doesn't%20look%20as%20pretty%20but%20tastes%20good%20just%20the%20same!%3C/p%3E%3Cp%3EWhen%20the%20burgers%20come%20out%20of%20the%20pan,%20turn%20up%20the%20heat%20to%20medium-high,%20add%20the%20peaches%20and%20cook%20them%20until%20they%20are%20browned.%3C/p%3E%3Cp%3EServe%20the%20burgers%20on%20toasted%20buns%20with%20some%20of%20the%20reserved%20apricot%20glaze%20and%20grilled%20peaches.%20%20If%20you%20want%20to%20make%20your%20own%20apricot%20glaze,%20puree%20canned%20apricots%20with%20some%20fresh%20ginger,%20lemon,%20tamarind,%20salt%20and%20mustard.%3C/p%3E%3Cp%3EHave%20any%20of%20the%20Lowfat%20Mustard%20Sauce%20left%20from%20the%20previous%20recipe?%20%20Here's%20another%20dressing%20you%20can%20make%20from%20yesterdays:%3C/p%3E%3Cp%3E2%20tablespoons%20of%20Lowfat%20Dijon%20Mustard%20Salad%20Dressing%3C/p%3E%3Cp%3E2%20tablespoons%20nonfat%20Greek%20yogurt%20(I%20use%20Oikos)%3C/p%3E%3Cp%3E2%20teaspoons%20sesame%20oil%3C/p%3E%3Cp%3E1%20teaspoon%20soy%20sauce%3C/p%3E%3Cp%3E1%20teaspoon%20water,%20or%20more%20to%20taste%3C/p%3E%3Cp%3EMix%20everything%20up%20with%20enough%20water%20to%20make%20it%20the%20texture%20you
